Filipino Coconut Macaroons

Finally, Fiesta Friday is here once again – a wonderful and exciting event where you could sit back and chat with the lovely guests and eat the treats they have brought which in reality, you only get to imagine that. How I wish we get to meet each other someday and talk about foods, kitchen mess and other stuffs. That would be so much fun! πŸ˜€ Thank you, Angie, for bringing us all together to have some chit-chat and relax from a long (and exhausting) week. We love you, Angie!

I and Selma are lucky to co-host (for the second time) FF17 last Friday with Alex @ Dinner Daydreams. Though I was really late, I was happy that I get to catch up with everyone at the party… and I was lucky that nobody arrested me for having sugar rush because most of our guests brought healthy treats and that was awesome! In other words, I behaved myself last FF.

…and before I bring you my yummy treat for today’s FF, I would like to say CONGRATULATIONS to all the winners of the Fiesta Friday Challenge #1 – Kulebyaka from Mila @ Milk and Bun, Peach and Basil Cheese Danish from Michelle @ Giraffe Can Bake, Botvinia from Sue @ BirgerbirdΒ and Sourdough bread w/ wild mushrooms and herbs from Gerard @ Bread and Tortillas. Also, CONGRATS to all the special mentions and of course, to all those who have participated – we did a good job (especially for those who used yeast for the first time).

And of course, let us not forget the mastermind of the challenge, Angie and Catherine! You are both amazing and we don’t know how to thank you enough for putting so much time and effort for having this exciting challenge to work. Last but not the least, to our generous sponsor who remains anonymous up to this moment but I am sure I know who you are. πŸ˜€

Since most of us loves mini version of yummy treats, I am bringing you one of my favorite Filipino sweets – Coconut Macaroons! I made my first macaroons using regular-sized muffin pans but it seemed not right to me. Our version of coconut macaroons are baked using mini muffin pan/moulds so I decided to get myself mini muffin pan. What’s a better excuse in buying mini muffin pan? BECAUSE FILIPINO COCONUT MACAROONS should be in mini’s.

It’s so funny because I really wanted to buy mini muffin pan for the longest time but I told myself β€˜No! No! No!’ and in an instant after making my first coconut macaroons using the regular muffin pan, I thought β€˜These coconut macaroons are better in mini sizes! I NEED to buy that mini muffin pan.’ And there you go… πŸ˜€

Filipino Coconut Macaroons

  • Servings: about 3 dozens
  • Difficulty: easy
  • Print

  • 1/3 cup butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 14 ozΒ condensed milk
  • 1/2 cup flour
  • 2 cups desiccated coconut
  • 1/2 teaspoon vanilla extract
  • Raisin,Β as topping (optional)

  1. Preheat oven to 350 F. Prepare mini muffin pan lined with paper liners.
  2. In a bowl, add softened butter and sugar. Beat until fluffy (about 3 minutes).
  3. Add eggs one at a time, mixing after each addition.
  4. Add in condensed milk and vanilla. Mix well.
  5. In another bowl, mix flour and coconut. Add this mixture to the butter mixture. Mix well.
  6. Scoop batter into the prepare mini muffin pan. Top each with a raisin or two, if using.
  7. Bake for 15-20 minutes or until top is golden.
  8. Cool for 5 minutes.

Thanks to Kawaling Pinoy for the recipe.

These coconut macaroons will be loved (and maybe you’ll be crazy over them) if you are a coconut lover. When I made them for the second time using my new pan, I made them again within the same week. And the following month, I also made another batch. Now, you can tell how much I love these!

Can you tell how moist are these macaroons? They are so moist, soft and heaven in every bite! I wouldn’t tell you how many of these I munch on while taking the photos. You guess! πŸ˜›

Enjoy FF18!Β

To our co-hosts for today, have fun! πŸ˜€

And just a small note- I’d like to have some extra condensed milk on top! πŸ˜€ Yummy!

  8. Wow Jhuls! This looks like it would be just up my alley, and since they are miniatures, I would probably have a tendency to devour them all in one sitting. Macaroons are my weakness, but hey it’s the weekend, and I’m allowed to splurge :).

    1. Haha! IKR? You wouldn’t notice how many of these you ate ‘coz they are miniatures. And yes, we are allowed to indulge during weekends! πŸ˜€
      Enjoy FF and happy weekend!

  13. Jhuls Jhuls Jhuls….oh you see I woke up bleary eyed this morning to see your naughty little comments on the FF page and well as you know I am co-hosting so have a little leverage for crowd control, taking those naughty ones in hand. Though you have cooked what looks like the most delicious macaroons which I have re-blogged btw to my scrapbook I think your little teasing indiscretions should not go amiss and as such I think to prove whether I am right or not that you should come to the party and take the ‘naughty test’ yes that is right jhuls, let’s see if you really are naughty, we would all love to hear the results:

That above btw is the link to the naughty test!
    Tadaahh..drum roll and awaits results!
    Happy partying jhuls xx

    1. Wohoo! I am NICE, Justine! Here’s the result: ‘You’re sweet, loving, bubbly like sugar. You have an innocence about you that is as golden as heaven.’ Do you agree? Haha! So this is like a ‘gate pass’ now, eh? But I could come in now… πŸ˜€

      1. oh you can definitely come then, actually maybe you should be naughty to come and spice up the party but it seems you are fairy nice! hehe….maybe I should do the test…runs! xx

          1. lol I did the test it said this, lolol
You are a bad girl. You’re sexy, confident and would take any dare. You sip out the Devil’s cup everyday.

  14. Oh Jhuls! These are adorable!! I’m going to have to get some condensed milk and make these today! What a lovely looking and sounding recipe!! And everyone should have a mini muffin pan because everything just looks so cute when it’s in miniature!! <>

    1. Hi, Selma! Did you get your condensed milk? πŸ˜€ Please let me know if you make this, okay? These are really good! Happy FF18!

    2. So I made these a couple of days ago and they are just fabulous! Jake came down and ate five in one go and said ‘Mum these are delicious.’. I made 2 dozen and saved the rest of the batter to make a tart with – will post soon. Thank you so much for sharing these Jhuls, they are definitely a hit!

      1. Thank you so much, my dear Selma! You made me the happiest today! I couldn’t wait to see your post. I am delighted that you loved them, and Jake, too! πŸ™‚

  15. I’ve never baked with coconut before.. and after looking at these cute little treats.. I’m definitely going to try! Thanks for dropping by at Sugarfree Sweetheart, Jhuls! πŸ™‚

  16. Jhuls,
You are right – I’m relatively new to the Fiesta, but have so enjoyed meeting everyone and the support and advice that they give.
Thank you for co-hosting last week πŸ™‚
Your macaroons look so perfect – I will have to try them just to see if mine come out anything near as well!
    Enjoy the Fiesta!
    Emma x.

          1. Hey- Did you see my post (before the fiesta friday post) about the loyalty award…I have some funny things on there that I think will crack you up! πŸ™‚

    1. Thank you, Angie! I don’t so. I think her custaroons are more moist. She said if I love these coconut macaroons, I’ll love the custaroons more, which I think she’s 100% right. πŸ˜€ Custaroons are like custard+coconut macaroons together, so I bet I will drool over them. I will make them soon! πŸ™‚

Hope you are doing great, Angie! And have a happy fiesta! Sending hugs and love to you…

  18. These coconut macaroons are truly addicting! Like you, I couldn’t help myself from eating quite a few while taking photos πŸ™‚ Thanks for the mention. πŸ™‚

    1. Hi, Lalaine! I am glad that you came by. You have so many amazing recipes on Kawaling Pinoy and this is just one of them! Thank you for sharing! Have a wonderful Friday and happy weekend! πŸ™‚
